Semolina pudding

Preparation time – 20 mins
Ingredients
250 ml milk, whole or skimmed
20 gm semolina
25 gm sugar, caster or
unrefined
5 gm butter or margarine
2-3 drops lemon juice or lemon
essence
Method
1 Boil the milk in a
thick-based pan.
2 Sprinkle in the semolina and
stir to the boil.
3 Simmer for 15-20 minutes.
4 Add the sugar, butter,
flavouring (and an egg yolk if desired).
5 Pour into a pie dish or
individual dishes. Brown under the salamander.
