CHICKEN CALDEEN

Ingredients

250 gm Chicken (tender)

10 gm Ginger

6 nos Garlic

1 no Onion

1 tsp Coriander

1 no Red chillies-

1 tsp Cumin

1/2 tsp Turmeric

1 no Cinnamon

2 nos Cloves

1/2 tsp Peppercorns

1/4 Coconut

1 tbsp Vinegar

1/2 tsp Salt

30 ml oil

Method

1. Grind to a fine paste the coriander, red chillies, cumin, turmeric, cinnamon, cloves and pepper. 
2. Slice onion, garlic and ginger.
3. Grate coconut and prepare three extractions. 
4. Clean, wash and joint chicken. 
5. Heat cil. Add sliced ingredients. Sauté.
6. Add ground paste and fry well. Add chicken and fry for a few minutes longer.
 7. Add second and third extractions of coconut milk and simmer till chicken is tender. 
8. When chicken is done, add salt, vinegar and first extraction of coconut milk and remove from fire.
