TOMATO OMELETTE
Ingredients
2 nos Eggs
1/2 tsp Salt and pepper
30 gm Fat
3 nos Tomatoes
1 no Onion
Chopped parsley - few sprigs
Method
1. Blanch tomatoes. Cut into halves, remove seeds and chop roughly.
2. Chop onions. 3. Heat 15 gm fat. Sauté onions without discolouring
4. Add tomatoes. Simmer gently till all moisture is evaporated.
5. Prepare omellete as for basic recipe. 6. Fill with prepared tomato.
7. Fold. Place on a hot plate, sprinkle chopped parsley on top and serve at once with tomato sauce (served separately).
Note : A variety of fillings such as mushrooms, chicken liver, kidney, shrimp, ham, bacon, etc. can be used.
