 POULET SAUTÉ MEXICAINE


Ingredients

250 gm Chicken (young)

30 ml Oil

100 ml  Stock

1 no Tomatoes

20 gm Capsicum

20 gm Mushrooms

20 gm Butter

Salt and Pepper - to taste



Method

1. Clean and joint chicken. Season. 
2. Heat oil. Sauté pieces of chicken.

3. Add stock and one tomato chopped up. Cover and cook gently till chicken is tender. Check for seasoning. 
4. Dish chicken. Pour sauce over. Surround with grilled capsicum halves (seeds removed) and mushrooms. Gurnish with remaining tomato chopped and tossed in hot butter.
