 MACARONI à la NAPOLITAINE

Ingredients

225 gm Macaroni

225 gm Tomatoes

30 gm Carrots

30 gm Onions

115 gm Cheese

55 gm Butter

1/2 tsp Salt and Pepper


Method

1. Melt 15 gm butter. Add minced onions and brown. 
2. Add sliced carrots and tomatoes. Add salt and pepper. Cook until thick. Pass through a sieve. 
3. Cook macaroni in boiling salted water till tender. Drain in a colander and rinse under cold water. 
4. Grate cheese. 
5. In a pyrex bowl put a layer of cheese. 
6. Cover with tomato mixture. 
7. Place macaroni over. Sprinkle with remaining cheese and dot with butter. 
8. Place under a grill till cheese melts. Serve hot.
