Honey cake / Madeleines

 


Ingredients 

100 gm refined flour 

100 gm Fat 

100 gm Powdered Sugar

3 nos Eggs 

2 gm Baking powder 

2 ml vanilla essence 

2 ml Pineapple essence 

20 gm Jam 

50 ml Water 

150 ml Sugar syrup 

100 gm desiccated coconut ( coconut powder) 

Method 

1. Cream the fat and sugar then add the eggs and  essence

2. Gradually add the flour and baking powder mixture then to make batter 

3. Transfer into mould then bake it at 175 c for 20 mins 

4. After baking, cool and cut into square shape 

5. Mix jam and water, then melt it slightly and cool it 

6.  Dip the cake into sugar syrup then into jam liquid 

7. Roll the cake into coconut powder 

8. Decorate with pastry cream and jam
