Greek lentils soup
Ingredients
30 ml olive oil
1 no Onion ( chopped
3 nos Garlic ( minced)
1 no carrot chopped
2 tsp Oregano
1 tsp cumin
½ tsp Rosemarry
½ tsp chilli flakes
2 nos bay leaves
60 gm tomatoes
5 cups Vegetable stock
30 gm Red lentils
1 tsp salt
½ tsp lemon zest
2 tbsp lemon juice
Parsley for garnish
Method
1. Heat olive oil then add the herbs,
onion, garlic and carrot, sauté it well without burn
2. Add the tomatoes, lentils, broth and salt. Bring it to boil till mash
consistency
3. Remove from fire then add the lemon zest
, juice and parsley
4. serve with cheese
