 Fried Eggs in tomato sauce



3 tbsp Olive oil

1  no onion ( chopped )

½  no fennel leaves

2 no garlic  ( minced)

100 gm Tomatoes ( Puree )

½ tsp Salt

½ tsp Pepper

1 tsp red chilli flakes

1 tsp Honey

2 tsp balsamic vinegar

½ tsp oregano

3 no eggs

Method

1. To make a tomato sauce, In oil add the garlic, onion, fennel leaves, chilli flakes, oregano and vinegar then sauté it well

2. Pour the tomato puree  ( Blanched puree) then cook it well to make a thick sauce

3. Scramble the sauce unevenly then break the eggs in gaps then close with lid

4. Cook it for 10 mins, then serve it as like fried eggs with the joined tomato sauce
