 BREAD PUDDING

Ingredients

115 gm Bread

30 gm Butter

250 ml Milk

60 gm  Sugar

2 nos Eggs

30 gm Sultanas

Nutmeg - a pinch

30 gm Cashewnuts

Lime rind - a pinch

Method

1. Butter bread and break into small pieces. 
2. Boil milk and pour over bread and set aside for half an hour. 
3. Beat eggs well. Add sugar, lime rind and nutmeg. 
4. Pour over bread. Add sultanas and cashewnuts. Mix well. 
5. Pour into greased mould. Cover with greaseproof paper and steam till set. 
6. Serve hot with lemon juice.
