SCOTCH VEGETABLE SOUP
Ingredients
115 gm Carrots
30 gm Cabbage
30 gm Turnip
30 gm French beans
30 gm Ladies fingers
15 gm Onions
55 gm Potatoes
115 gm Tomatoes
1 flake Garlic
1 tbsp Fat
1 tsp Parsley
1 tsp Salt
a few sprigs
1 tsp Pepper
Method
1. Wash, peel and dice
carrots, turnip and potatoes.
2. Wash and dice
cabbage, ladies fingers and french beans.
3. Chop onions, garlic
and parsley.
4. Blanch and chop
tomatoes.
5. Melt fat. Add
prepared regetables except potatoes and tomatoes, chopped onions and garlic.
Cover and stew for a few minutes.
6. Add tomatoes,
potato, stock, chopped onions, garlic and seasoning.
7. Cook gently for two
hours.
8. Add cats. Miz well
and simmer for 15 to 20 minutes.
9. Add marmite mixed
in a little stock.
10. Remove and serve
hot garnished with chopped parsley.
