 POULET SAUTÉ CHASSEUR


Ingredients

250 gm Chicken (young)

30 gm Button mushrooms

50 ml Jus-lié

2 tbsp Butter

3 nos Tomatoes

5 nos Shallots (chopped)

1 tbsp Parsley ( chopped)

Method

1. Proceed as for Poulet Sauté upto stage 6. 
2. Add shallots to sauté pan 
3. Add washed, sliced mushrooms, cover with a lid and cook gently for 3 to 4 minutes without discolouring. 
4. Drain off fat. 
5. Add jus-lié (see recipe in Poulet Sauté) and blanched and pipped tomatoes. 
6. Simmer for 5 minutes, check for seasoning. 
7. Pour over chicken. 
8. Sprinkle with chopped parsley and serve hot.
