OLIVETTI ROMANE
Ingredients
500 gm Mutton
30 gm Carrots
60 gm Onion
1 flake Garlic
60 ml Tomato purée
a few sprigs Chopped parsley
250 ml Stock
1no Eggs
30 gm Butter
1 tsp Salt and pepper
1 no Bay leaf
Few drop lime
Method
1. Clean and mince
mutton.
2. Peel and mince
carrots, onions and garlic.
3. Mix together minced
mutton, salt, pepper, half the onions.
4. Shape into olives.
5. Heat butter. Add
garlic, remaining onions and carrots.
6. Cover and cook till
tender but not brown.
7. Add the tomato
purée and the remaining seasoning.
8. Add stock. Put in
the olives. Simmer for 15 minutes.
9. Serve hot with a
dash of lime juice and chopped parsley
