 CONSOMMÉ à la JULIENNE


Ingredients


1 litre Clarified consommé


Garnish

1/2 no Carrots 

1/4 no Turnip

3 cm Leek (while part only)

3 cm Celery (heart)


Method

1. Cut vegetables into very thin strips (like matchsticks) about 2.5 cm long, shred lettuce, 
2. Cook all the vegetables (except lettuce) in boiling salted water until tender. 
3. Add to boiling consommé immediately before serving.
