Ingredients
200 gm Brinjal
1 no Onion
50 gm Coconut
1 tbsp ginger garlic paste
1 tsp garam masala powder
1 tsp chilli powder
1 tbsp coriander powder
1 tsp sesame seeds
2 tbsp peanuts
1 tsp cumin
2 tbsp tamarind pulp
1 tsp Salt
Method
1. Roast the peanuts, sesame seeds and coconut then keep it aside
2. In hot oil add the cumin, sliced onion then saute it well
3. Add the ginger garlic paste saute it for 5 mins
4. Add the salt, chilli powder, garam masala and coriander powder then put into mixer jar with dry roasted peanut, sesame and coconut
5. Make a paste without water
6. Cut the brinjal into four slit without cutting the edge
7. Stuff the pasted masala into the brinjal and left for 30 mins
8. Heat the pan with little oil, shallow fry the stuffed brinjal for 20 mins
9. serve it with rice or sambar satham
