Kajjikayalu / coconut Crispy sweet / Andhra Style Kajjikayalu



Ingredients 

For Dough 

200 gm Refined flour 

1 tbsp sooji ( white Rava )

2 tbsp Ghee (or) Oil 

Salt - Pinch 

For stuffing 

50 gm Roasted Gram ( Roasted Channa dal)

1 cup Grated coconut ( roasted )

50 gm Sugar 

3 nos Cardamoms

200 ml Oil - for fry 

 Method 

1. Take the refined flour, sooji,salt and ghee in vessel then mix it thoroughly, gradually pour the water to make a stiff dough ( as like chapati)




2. Make the powder of roasted gram, sugar and cardamom in mixer grinder 


3. Grate the coconut then roast it till dry then mix it with stuffing 



4. Divide the dough into small balls 




5. Roll out into small round then place the stuffing in center 



6. Fold the edges with water then make a piping design 





7. Fry it in a medium flame till it reach golden brown colour, store it in container for future use
