Aviyal / Avial/ Vegetable avial



Ingredients 

For Boiling 

100 gm Drumstick 

50 gm Carrot 

50 gm Beans 

50 gm Caulifower 

50 gm Raw banana

50 gm Potatoes 

1/2 tsp Turmeric powder 

1 tsp Salt 

For Paste 

1 tsp Cumin 

1 tbsp Ginger 

3 nos Green chillies

1/2 Coconut 

For tempering (tadka)

2 tbsp Coconut Oil 

1 tsp Mustard leaves 

15 nos curry leaves 

1/2 tsp Black gram ( urad dhal )

1/4 tsp Asafoetida 

3 tbsp Curd 

Method 

1. Blend the coconut, cumin, ginger, and green chillies to make a fine paste 

2. Cut all the vegetables lengthwise cook it for 10 mins in hot water with turmeric 


3. Once vegetables are cooked then strain it and add vegetables together with paste then again cook it for 5 mins 

4. finally add the curd and stir it well 

5. Temper the above tadka ingredients in hot oil then pour it over the avial 

6. Serve it with meals
