Mexican Vegetable Soup


Ingredients 

2 nos Onion (chopped)

1 no carrot (diced )

1 tbsp Oil 

2 no Garlic 

3 cups Vegetable broth (Thick stock)

1 no Tomato (diced)

1 no greenchilli 

1/2 no zucchini ( chopped)

3 nos Beans (diced)

1/2 no red capsicum (diced )

1/2 tsp Oregano 

1/2 tsp cumin powder 

1/2 tsp Pepper powder 

50 gm Frozen corn 

1 tbsp lemon juice 

2 tbsp chopped coriander leaves 

Method 

1. Heat the oil then add the garlic, onion and carrot, stir it for 2 mins 

2. Pour the vegetable broth into it, then add zucchini, tomato, beans and red capsicum 

3. Add salt, pepper powder, cumin powder and oregano then leave it to boil and tender of vegetables 

4. Finally add the corn and cook it for 2 mins 

5. Remove from fire then add lemon juice and coriander leaves, serve it warm
