Mexican Rice


Ingredients 

1 cup Basmati Rice 

1 cup Tomato sauce 

3 tbsp Oil or Olive oil 

3 no Garlic ( minced) 

1 no Onion (chopped)

2 cups Vegetable broth 

1/2 cup Frozen Corn 

1 no Carrot ( diced)

3 tbsp Peas 

1/4 tsp chilli powder 

1/4 tsp cumin powder 

1/2 tsp salt 

1 tsp pepper powder 

2 nos Tomatoes ( diced )

1 tbsp Coriander leaves ( chopped)

Method 

1. Heat oil in vessel, add garlic and onion, stir frequently to make onion light brown colour

2. Add the carrot, corn, chilli powder and cumin, stir it frequently for 3 mins 

3. Add soaked rice then stir it 

4. Add tomato sauce and vegetable broth then leave it to cook in simmer for 10 mins 

5. Finally add the diced tomatoes then leave it to cook with rice for 2 mins 

6. Garnish with chopped coriander leaves and serve
