Ingredients
200 gm Chicken breast
2 wedge of lemon
2 nos shallots
1 tsp Salt
1/2 tbsp minced garlic
2 tbsp Oil
1 no green capsicum ( chopped)
1/2 no Red Capsicum ( chopped)
2 tbsp Olive oil
1 /4 cup Tomato sauce
1/4 tsp Oregano
1/4 tsp pepper
1 cup water
coriander leaves (cilantro)
4 nos Olives
Method
1. Marinate the chicken with salt, pepper, lemon, oregano and minced garlic for 30 mins
2. Heat oil and roast the chicken till light brown colour
3. Heat oil, add shallots, olives, green capsicum and red capsicum
4. Pour the tomato sauce then add the roasted chicken into it ( Add the water if necessary )
5. finally add the chopped coriander leaves, mix it well and serve it with Spanish rice
