Srilankan Yellow Rice


Ingredients





2 cups (200 gm )Basmati rice





1 no Onion





3 tbsp Ghee





6 nos cloves





4 green cardamom





1/2 tsp cumin





Salt - to taste





1/2 tsp turmeric powder





1 tbsp Ginger





10 nos Garlic





1 cup Coconut milk





5 saffron threads





Method





  1. wash and soak the rice aside
  2. Take the coconut milk then put the saffron into it
  3. Chop the onion, ginger, and garlic
  4. Heat the ghee in vessel then add the onion, saute it well
  5. Add the cardamom, cloves, curry leaves, ginger, garlic and turmeric
  6. Measure (Rice) 1 : 2 (liquid) ,Pour the saffron mixed coconut milk and water
  7. Close the lid and wait till boil
  8. Add the soaked rice into the water, stir it to prevent burning
  9. Turn into water dry condition, put it like a dum
  10. Garnish with fried cashew nuts, raisins, fried onions and boiled eggs
