Ingredients
200 gm Brinjal
100 gm Shallots (Small onions)
1 tsp Mustard seeds
10 nos Garlic
1 tsp Ginger
50 gm Jaggery
Salt - to taste
2 tbsp Oil
1 tbsp Vinegar or Tamarind
Method
- Wash and cut the brinjal into cubes
- Apply salt and keep aside
- Grind together of onion, mustard, ginger and garlic into fine paste
- Fry the brinjal in a frying pan
- Melt jaggery and strain
- Soak tamarind and extract
- Add melkted jaggery, tamarind pulp and vinegar to fried brinjal, check the seasoning, cook till dry
