Moju/ Brinjal Fry


Ingredients





200 gm Brinjal





100 gm Shallots (Small onions)





1 tsp Mustard seeds





10 nos Garlic





1 tsp Ginger





50 gm Jaggery





Salt - to taste





2 tbsp Oil





1 tbsp Vinegar or Tamarind





Method





  1. Wash and cut the brinjal into cubes
  2. Apply salt and keep aside
  3. Grind together of onion, mustard, ginger and garlic into fine paste
  4. Fry the brinjal in a frying pan
  5. Melt jaggery and strain
  6. Soak tamarind and extract
  7. Add melkted jaggery, tamarind pulp and vinegar to fried brinjal, check the seasoning, cook till dry
