Hyderabadi Baingan / Hyderabadi Brinjal


Ingredients





250 gm Small Brinjal





1 tsp cumin





1 tsp fenugreek seeds





Curry leaves - few





1/2 tsp turmeric powder





1 tsp chilli powder





Gravy





1 tsp cumin





1 tsp Coriander seeds





1 tsp Sesame seeds





20 gm Peanuts





1 no Onion





2 tbsp Tamarind Pulp





2 nos Greenchillies





2 tbsp Chopped Coriander leaves





3 tbsp Oil





Salt - to taste





Method





  1. Cut the brinjal into quarters, leaving stems intact and soak in salt water
  2. Roast peanuts and onion together and grind to a paste
  3. Heat oil and add fried cumin, methi, curry leaves, turmeric and chilli powder
  4. Add drained brinjal and fry the paste for 5 mins
  5. For the gravy, heat the remaining oil and fry the masala for 5 mins
  6. Pour the tamarind pulp, greenchillies and fresh coriander and simmer for 5 mins
  7. Finally add brinjal into the gravy and simmer for 10 mins then serve hot
