Khameeri Roti


Ingredients





10 gm yeast





1 tsp sugar





3 tbsp like warm water





1 Egg





1 tsp Salt





200 gm Wheat flour





30 ml Ghee





Method





  1. Add sugar and yeast to warm water
  2. Let it stand for 10 mints to culture
  3. In a large bowl, mix salt and wheat flour. Mix ghee with fingers, Knead with egg and yoghurt
  4. Add cultured yeast, and knead about 5 mins
  5. cover with a dump cloth and let it stand for about an 1/2 hour
  6. Punch down the dough
  7. Knead again and let it stand another hour till double in size
  8. Divide dough in equal size balls. Roll each ball into a round roti
  9. Roll dough out to form a 4 inch to 5 inch diameter and 1/4 inch disc
  10. Pinch the bread and flatten it to form a patty and 2 inch round
  11. keep on flattening and stretching the dough by oiled hand
  12. After you got it rolled, you may use a rolling pin to smooth it out
  13. Cook on a griddle and then on an open fire so that the rotis puff up. Serve with hot ghee
