Dum Aloo Kashmir


Ingredients

1 kg Baby Potatoes

1 1/2 tsp Cumin

1 1/2 tsp Chilli powder

1 tsp Kashmiri chilli powder

1 tsp Turmeric powder

1/2 tsp Garam masala

1/2 tsp Coriander powder

1/4 tsp Asafoedita

2 nos Cloves

1 tsp Fennel powder

2 nos Cardamom

1 no Bay leaf

1 stick Cinnamon

100 gm Beaten curd

1 sprig Coriander leaves

2 tbsp Crushed cashew nuts

30 ml Oil

Salt - to taste

Method

  1. Wash, peel and pick the potatoes with a fork
  2. Heat oil and fry them to golden brown, then reserve
  3. Heat 2 tbsp of oil in a pan and fry the cumin, cardamom, cloves, cinnamon and bay leaf 
  4. Add all the masala powders, asafoetida, with Curd and crushed nuts 
  5. Close with tight lid and put it in dum for 10 mins 
  6. Garnish with chopped coriander leaves
