Plum Cake / Rich Plum cake / पल्म केक / பிளம் கேக் 



Preparation time : 60 mins 

Yield : 1 kg 


Ingredients 

95 gm Fat ( Margarine or Vanaspati) 

95 gm Butter

4 nos Eggs 

180 gm Refined flour 

40 ml Black jack 

8 gm Garam masala 

180 gm Castor Sugar 

5 gm Baking powder 

For Soaking - 200 gm Soaked ingredients 

50 gm Raisins 

50 gm cashew nuts

50 gm Cherries 

50 gm Almonds 

100 ml wine or Brandy  

Method 

1. Soak the above ingredients into the wine or brandy for 30 to 45 days 

Method 

1. Cream the fat on the working table or vessel and add in the sugar, continue creaming 

2. Slowly start adding the eggs a little at a time, creaming it well 

3. Once all the eggs have been used in the creaming process add in the black jack and mix it well 

4. Add the soaked fruits ( with the grounded spices in it) to the above mixture and fold in the flour mixed with the baking powder. fold the mixture gently 

5. Pour them into lined cake mould and bake them at 175 ℃ till done 

6. Cool the cake and serve it 


Note : Black jack - melt the 3 tbsp white sugar without water in pan till it become dark brown colour, finally pour 4 tbsp water into it to make like a syrup
