Biscotti



Ingredients 

12 gm Cocoa powder 

110 gm Refined flour 

1 gm Cinnamon powder 

75 gm Cashew nuts 

30 gm Brown sugar  

75 gm Castor sugar ( powdered sugar )

12 gm Fat 

1/2 cap Orange essence 

1/2 cap Vanilla Essence 

2 nos Eggs


Method 

1. Measure the flour, brown sugar, cinnamon powder, vastor sugar and cocoa powder together

2. Measure the cashew nut and crush it with a rolling pin and add it to the above mixture together with the melted fat and the eggs mixed with the essence 

3. Mix the mixture well with a whisk and rest it in for 40 mins 

4. After resting the dough roll it out at 3 cm thick and put it to 3/4 th bake on a greased tray at 175℃ for 20 mins 

5. Once 3/4 th baked remove the tray and cut them legthwise 5 cm long and place them back on the tray to cook them on both sides turning after it is baked on one side, to ensure even baking at 150℃

6. Once baked cool them and store them in air tight container
