 Mango- Ginger Pickle / Mango-Ginger Thokku

மங்காய்ஞ்சி தொக்கு


Ingredients 

 1/4 kg Mango-ginger 

1 lemon size Tamarind

1/2 tbsp Salt

1/4 tsp Mustard seeds 

1 tbsp Chilly powder 

1 tbsp Jaggery 

2 spring Curry leaves 

50 ml Sesame oil / Groundnut oil 

 

Method   

1. Pre-prepare the ingredients like grate the mango-ginger, soak the tamarind in water

 

2. Heat the oil then add the mustard seeds, curry leaves and mango-ginger roast it well 




 3. Add the chilly powder and salt then roast it well, then add the jaggery or brown sugar 



4. Pour the tamarind pulp into the mango-ginger mixture


5. Make it as thick consistency thokku till the oil come out stage


6. Cool it and store, It is better to use for two week
