FATLESS CHOCOLATE SPONGE
1. Scale all the ingredients. Place the eggs and the vanilla essence in a clean bowl and start whisking it with a slow addition of castor sugar.

Eggs - 150gm
Castor sugar - 150gm
Cake flour - 130gm
Cocoa Powder - 20 gm
Vanilla essence - 3 gm
Method
1. Scale all the ingredients. Place the eggs and the vanilla essence in a clean bowl and start whisking it with a slow addition of castor sugar.
2. Sieve the flour with cocoa powder and keep it aside
3. Once the egg mixture becomes light and fluffy gently fold in the flour and cocoa powder mixture.
3. Pour the mixture in to cake rings and bake them in a preheated oven at 175 ̊C for 40 mins.
4. Once baked remove it from the oven, cool it on a wire rack and use as required.
