 Egg and Potato curry

Ingredients used 

4 nos      Egg 

3 nos      Potatoes 

2 nos      Onions 

1 no        Red chilly

1 tbsp     Coriander 

1/4 tsp    Turmeric powder 

1/4          Coconut 

1 (small) Cinnamon 

2 nos       Cloves

2 nos       Green chillies 

2 gm        Ginger 

1 sprig     Curry leaves 

1/2 tbsp    Salt 

1 cap (10 ml) Vinegar

1 cup (30 ml) Oil 

Method 

1. Hard boil eggs ,Crack and cool in water. shell and keep aside 

2. Peel potatoes, quarter and immerse in cold water 

3. Slice onions. Chop ginger, grate the coconut 

4. Roast the red chillies, coriander and turmeric and grind to a fine paste 

5. Grind coconut also to a smooth paste 

6. Heat half of the oil saute sliced onions leaving aside a few slices for tempering 

7. Add ginger, whole greenchillies and ground spices. when well fried, add ground coconut and fry for 2 mins 

8. Add potatoes, water and salt and cook till potatoes are tender 

9. Add eggs, cut into halves and vinegar, Remove from fire 

10. Heat remaining oil in a fry pan 

11. Brown onion, cloves and cinnamon. Add curry leaves and pour over curry
