Jalebi / Simple jalebi / jilapi / जलेबी रेसिपी / ஜிலேபி - step by step procedure with photos

 


Ingredients 

Refined flour                     100 gm ( 1 cup )

Corn flour                          20 gm ( 2 Tbsp )

Curds                                 20 gm ( 3 Tbsp)

Cooking soda                    1 tsp

Food colour                       a pinch

Saffron                               a pinch

Sugar                                 200 gm ( 1 Cup )

Lemon                               1 wedge

Rose essence                     few drops

Ghee                                  to fry


Method 

1.     Mix the above ingredients (except sugar and oil) together with water to form a thick batter.

               

    






2.     Make a sugar syrup with sugar, water, saffron, lemon and to make one – string consistency.


           





3.     Heat oil in flat fry-pan “jallebi-kara”. Pour the batter into the piping bag or cloth bag or any carry bag, squeeze out the batter into the ghee.






4.     Fry till crisp (do not brown).

           

5.     Put into prepared syrup (syrup must be cooled first).





6.     Steep in sugar syrup. Remove and arrange in plates.
